Chef Avin Thaliath, a pioneer in the baking ecosystem of India, grew up in the city of Kochi. His father (name) served in the Indian intelligence service and was often away from home being posted in different places in India and abroad. His mother, Poly Matthew Thaliath, was a Montessori school teacher in Kochi and she encouraged him to become a chef.[1]
His mother's baking and childhood experiences in Kerala left an indelible mark on his culinary tastes and product expressions. Once, on his birthday, his mother baked a cake based on an Iranian recipe which she had picked up from a neighbour in Iran when she was there with her husband. It was an almond flour and pistachios cake. Chef Avin says: “This cake is the genesis of everything. Back in 2001, when I wanted to study hotel management, no one took me seriously except my mother." Chef Avin began baking this cake much later in life, when he was in France for his studies on a scholarship. The cake is part of his menu at the Lavonne Cafe, Bengaluru.[2]
