The Student Pantry
In response to the growing concern of food insecurity among students, Mullins founded The Student Pantry at the University of Galway. This student-led initiative aims to combat food waste and provide free, nutritious food to students in need.
Leveraging partnerships with organizations like FoodCloud a social enterprise that connects businesses with surplus food to charities Mullins organized the collection of food nearing its sell-by date from local supermarkets. The collected food, which might otherwise go to waste, is redistributed to students through the pantry.
Initially, the project faced challenges, including a lack of funding. Mullins personally invested approximately €5,000 to cover operational costs such as fuel and equipment. Recognizing the pantry's impact, the university's societies office and Students' Union later provided support, including funding for fridges, freezers, and a dedicated space on campus.
