Vinod Kumar Joshi (17 June 1955 – 7 July 2021) was an Indian agricultural scientist and educator, whose 35-year career advanced postharvest technology, fruit fermentation and disability inclusion in higher education. He pioneered non-grape fruit wine production, valorized apple pomace into bioethanol and β-carotene, and authored 17 books and over 300 articles.[2]

Vinod K. Joshi was born in Kungrat, Himachal Pradesh, the eldest of five siblings, to M. L. Joshi and Bimla Joshi.[3] After contracting poliomyelitis at age four and undergoing corrective surgeries (1965–67), he learned to walk with callipers and crutches.[4] He completed his BSc (Medical) at DAV College Jalandhar in 1975 and his MSc (Microbiology) at PAU Ludhiana in 1977 (thesis on enteropathogenic _E. coli_ in milk).[5] As an in-service PhD candidate at GNDU Amritsar, he submitted his 1993 dissertation on apple-juice fermentation and pomace utilization and was awarded his doctorate in 1994.[6]

In February 1987 he married Sushma Joshi, who also lived with post-polio paralysis; they had two sons, Bharat and Sidharath. An avid reader and lifelong learner, he mastered hand-controlled driving in 2004 and cared for his mother during her terminal illness.[7]

Academic career

Joshi joined the Himachal Pradesh Department of Horticulture’s Quality Control Laboratory in Shimla in 1978, conducting fruit-processing research despite daily 4 km commutes on crutches.[8] In 1986 he moved to Dr Y. S. Parmar University, where he taught postharvest and food science courses, established a pilot-scale processing unit, and delivered extension lectures on All India Radio and Doordarshan. Promoted to Head of Department (2008–15), he secured 30+ grants and modernized laboratory infrastructure.[9]

After retirement, he served at CSIR–IHBT, Palampur (2016–18), focusing on Himalayan bioresource valorization and fermentation technologies.[10]

Research and editorship

His work covered non-grape fruit wines (cider, vermouth, low-alcohol wines), lactic-acid fermentation of vegetables, and postharvest loss reduction. He co-founded and served as Editor-in-Chief of the International Journal of Food and Fermentation Technology (from 2011), guest-edited special issues of Journal of Scientific & Industrial Research and Natural Product Radiance, and sat on multiple editorial boards.[11]

Advocacy and accessibility

In 2006 he was appointed Nodal Officer for Persons with Disabilities at YSPUHF, founding the Equal Opportunity Cell. He:

  • Installed ramps, hand-rails and accessible restrooms
  • Secured travel allowances and reserved positions for PWDs
  • Organized mock JRF/SRF/ARS exams with assistive-tech workshops
  • Launched an annual cultural festival for students with disabilities[12]
