Ron Pickarski has held a range of leadership roles in plant-based food development. He served as Vice President of Research and Development at Food Integrated Technologies, where he helped design and scale plant-based food solutions for commercial use.

He is the founder and president of Eco-Cuisine, Inc., a company based in Boulder, Colorado that develops vegan foodservice products and trains culinary professionals in plant-based techniques. Under his direction, Eco-Cuisine has created vegan mixes for seitan, sauces, baked goods, and other shelf-stable pantry staples used in institutional kitchens.

In addition to his work with Eco-Cuisine, Pickarski has consulted independently as a plant-based culinologist and product developer, working with chefs, hospitals, universities, and manufacturers to bring more sustainable, vegan options into foodservice operations.

Earlier in his career, he worked as an Executive Chef and plant-based culinary consultant, training chefs in techniques for vegan menu development and speed-scratch cooking. His approach focuses on combining classical technique with plant-based ingredients — what he calls “culinary logic” applied to modern vegan cooking.
